Why is not possible to do it anymore?
Use board editor or analysis board from tools menu, then press continue from here (on analysis you need to click the menu-button next to movehistory-arrows first)

I think it has always been like that, it would be to confusing trying to present the position in the seek-list. Custom tournaments can be created for certain openings.

if you mean after a game you can anylyse this with engine you just have to put it on...

I think it would be a great feature to have a section "Thematic seeks".
Lichess as it is right now, would allow to make it quite practical, since one could just see the Position by hovering the seek.
I would just love to play the openings I want instead of dealing with certain openings that bore me due to its frequency played.
As I am not playing for rating at all, but for games that I do enjoy, a feature like that would reduce the games that I finish just cause I try to stay polite, instead of just leaving/resigning from 90% to almost Zero.
For example I would guess I have to face a hundred Bowlder Attacks till someone plays the Morra Gambit against me. To me, in a way that is just a waste of time, since I am way more happy to face a opening that I find interesting, than to win the game in the end.
